Ingredients

2 Packets yeast or 2 tbsp fresh yeast
1 tablespoon sugar
2 cups warm water
3 1/2 cups all purpose flour/whole wheat flour (or a mixture of both)
1 teaspoon salt
2 tbsp olive oil
eggwash
Zaatar Filling
4 tablespoons Zaatar
4 tablespoons Olive oil
Cheese Filling
1/2 cup White Cheese or Feta Cheese, crumbled
1/2 cup Mozzarella cheese, shredded
1 Egg white
a sprinkle of sesame seeds

These mini Zaatar and cheese rolls are great for packed lunches, appetizers, snacks, or breakfasts. Kids will love them, and so will everybody else!

DIRECTIONS: The Dough

Makes 30 rolls
Combine yeast, sugar and water in a large bowl. Let proof for 5 minutes. Yeast should turn foamy. (start over if that doesnt happen)

Add flour, salt and olive oil to the yeast water mixture and mix (either by hand or stand mixer). Add more flour if the dough is too sticky (1 tbsp at a time). Knead for 5 minutes.

Place dough in a large oiled bowl, cover with a towel and store in a dry place for 40 - 60 minutes.

Preheat oven to 400 F
Line baking pan with parchment paper. Spray and set aside.

Filling:

Combine Zaatar and olive oil to create a pasty texture. Set aside.
In a separate bowl combine cheese filling ingredients.

The Roll

On a floured surface, bring out the dough, cut into 4 equal pieces.
Roll out each piece separately , to create a rectangular shape. Spread either the cheese or zaatar mixture over the dough and roll up from the longer side then, then slice them up and place in pan.
Repeat for the rest of the dough. Brush the rolls with eggwash, sprinkle sesame seeds on top and let them sit for another 10 minutes before baking.

Bake for 20 minutes or until golden.
