Directions

This bake tastes great warm, straight out of the oven and even better as bars served at room temperature. I like making this as a healthy side dish during a weekend breakfast spread and saving some for a yummy packed breakfast bar for Issa to take to school.
Note: This is not a dessert, if you want it to be you can add a a few tablespoons of brown sugar to the mix.

DIRECTIONS:Preheat oven to 375 F |

In a large bowl mash banana, add ¾ cup milk, add in the oats, cinnamon and vanilla and fold together. |

Pour in diced mango pieces, raisins and shredded coconut mix. Then fold in the beaten egg. |

Spread mixture in baking dish (you can sprinkle some extra coconut over the top). |

Bake for 20 – 25 minutes. |

Make ahead: Add all ingredients together except the egg. Place in an airtight container. Before baking, fold in beaten egg and spread on baking dish. |
