Directions
This cake is a bit different from the usual mango cakes, the turmeric is very subtle you cannot taste it over the mango and cardamom, but it is there for it’s colors and antioxidant properties :D.
I used ripe, Indian mangoes for this recipe which are quite sweet so I reduced the amount of sugar, making it perfectly kid friendly!

I like adding variety to Issa’s diet. You can’t ban kids from eating cake. They will go to birthdays and bakeries and will almost always ask for a slice. But I would like for him to have an acquired taste for sophisticated cakes, instead of birthday cakes that are loaded with buttercream and almost flavoured only with sugar.
Did you know that when you bake turmeric with baking soda you get this orange/red colour, almost like an all natural red velvet cake!

DIRECTIONS:Preheat oven to 375 F. |

Whisk flour, baking soda, baking powder, turmeric and cardamom. Set Aside. |

In a mixing bowl cream together butter and sugar, add eggs and vanilla and mix. Pour in diced mangoes and milk and blend together. |

Pour batter into cake pan and bake for 30 minutes or until toothpick inserted comes out dry. |
