These bites are the perfect breakfast for those busy mornings when we really don’t have time to spoon feed, or clean up a messy breakfast. Even when packing our breakfast to go there’s no need to compromise on nutrition. Oats are packed with antioxidants, vitamins and minerals making them a great, wholesome breakfast or snack for the whole family!
I used a brownie tin to bake these bitesize, you can use a muffin tin, but pour the batter half full, or you can use a regular baking tray that’s 20 – 24cm x 20 – 24cm.
I usually zip them up in Issa’s Bumkins reusable snack bags and take them to go.
These oat bites are sweetened naturally with fruits with no added sugar. I used fresh mango, shredded coconut and canned pineapple (pineapple is a must for this recipe, it really sweetens these bites and is the main flavour). A tropical blend. You can easily substitute the mango for another fruit of similar texture.
Yes, baking may take longer to get breakfast ready, but I just distract Issa and do other things in the morning while the bites are baking. I don’t have to stand over the stove and cook which means, my hands are free and I am able to do other things outside the kitchen for the 30 minutes.
