Ingredients

3/4 cup Milk
1/2 cup water
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup carrots (grated)
1/2 cup old fashioned/rolled oats
1 tablespoon raisins
1 tablespoon maple syrup
1 tablespoon chopped pecans (optional)
Ricotta Cheese Topping
2 tablespoons ricotta cheese
1 tablespoon maple syrup

CREAMY CARROT CAKE OATMEAL

Having a hard time sneaking veggies in your picky eater’s meal time? here it is! a sweet vegetable creamy oatmeal medley that their tastebuds, tummy and eyes are sure to love!

Which meal is your toddler’s favourite? Mine loves breakfast and it’s usually the time of day when he eats the most. If yours is the same way, take advantage and offer foods he usually wouldn’t eat any other time during the day.

Recipe

In a small pot combine milk, water, cinnamon and nutmeg over medium heat. Bring to a boil

Reduce heat to low. Add oats and grated carrots. Stir in raisins.

Cook on medium low for 10 minutes, while stirring every now and then.

Remove from heat, stir in maple syrup

Topping

Combine 2 tablespoons of ricotta cheese with maple syrup and top over plated oats.

Add pecans and serve.
