Ingredients

½ cup (100 grams) butter, melted
1 tablespoon brown sugar
2 eggs room temp
2 teaspoons vanilla extract
2 bananas, mashed ripe
1/4 milk
2 cups oat flour (ground oats)
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 cup dates, pitted

Muffins like these are great to have on hand, they’re the perfect dessert fix that both us and the kids can enjoy without guilt.

Directions

Have you ever had a banana and date muffin? I saw these in a cafe once and thought what a great combination. Banana and dates (with a glass of milk, of course) pair so great together. Since both fruits are sweet enough, I decided to make a more toddler  friendly version with the least amount of added sugar possible without sacrificing on great taste!

This recipe makes 12 muffins, they store great in an airtight container for 2 days, if they stay there that long that is. 🙂

These banana and date muffins are soft, sweet, full of amazing flavours and ready in about 30 minutes.

DIRECTIONS:

Preheat oven to 350 F
Line and spray muffin tin and set aside.

Soak dates in boiling water for 10 minutes until soft. (you can soak dates that have been refrigerated before removing the seeds, makes pitting them much easier). Once soft, chop dates finely and set aside.

In a mixing bowl, mix melted butter, sugar and add one egg at a time. Add vanilla and mashed bananas and milk then stir together (the bananas shouldn't blend in the batter, you should see banana pieces here).

Sift all dry ingredients into a separate bowl, then add into batter. Fold in the chopped dates. Fill into muffin tin.

Bake for 15 - 20 minutes, or until toothpick inserted comes out dry.
Allow to cool slightly before serving
